Today’s Gourmet by Jacques Pepin (1991)

So you’re looking for a cookbook that offers up fabulous food–but not too many calories; dishes that are out of the ordinary–but not too time-consuming to prepare; meals that are delicious–but won’t clog your arteries. Sounds like a tall order, but Jacques Pepin delivers the goods in Today’s Gourmet, a companion volume to his top-rated weekly series on PBS.

Pepin’s approach is simple: cook with elegance, style, and zest, and take it easy on the fat, sodium, and calories. Though health is an important concern of Pepin’s, he’s no fanatic–he still uses butter, salt, and cream in small amounts when they’re called for, and he believes that eating should be joyful, not fraught with denial or resentful obligation.

As he says in his introduction, “In a true reflection of life, some of the recipes are more concerned with health than others. When we join with friends and family on holidays and special occasions, we sometimes don’t count calories–we indulge. At other times we are more careful.” Thus his menus range from meals equaling about 700 calories per person to others that add up to considerably more.

Today’s Gourmet doesn’t pretend to be a dieter’s cookbook, but it does provide cooks with a range of options that are both healthy and tasty.

This softcover cookook is in perfect condition. ISBN: 0912333073

Price: $1.99

Harriet Roth’s Cholesterol Control Cookbook

Formerly director of the Pritikin Longevity Center Cooking School, Roth admits that she, like many other gourmet cooks, at one time frequently cooked with large quantities of animal protein, butter, cream and eggs–until her husband was diagnosed as having a serious coronary condition. The author of Deliciously Low: The Gourmet Guide to Low – Sodium, Low-Fat, Low – Cholesterol, Low-Sugar Cooking here presents easy-to-understand information about cholesterol and how to control its presence in one’s diet. Also discussed are dietary fiber and how this affects cholesterol; weight reduction and maintenance; and cholesterol-lowering drugs sometimes prescribed when dieting proves insufficient. Roth stresses the importance of adopting healthful habits and carefully reading food labels to achieve one’s goals. Providing more than 250 recipes and 200 meal plans, she shows, moreover, that low-cholesterol cooking need not be uninspired. Also provided are calorie and nutrition tables of commonly used foods. ISBN: 0452266122

Before & After; Living & Eating Well After Weight Loss Surgery by Susan Nuziato Leach (2004)

At 278 pounds, Susan Maria Leach couldn’t fit into a roller coaster seat, couldn’t tie a bathrobe around herself, couldn’t even ride with her husband on the back of his Harley. Enough was enough. Susan underwent gastric bypass weight loss surgery. Now Susan weighs in at a mere 135 pounds. Her book, Before & After, is the story of her incredible journey from being too big to enjoy her life, to being able to truly enjoy life to its fullest.

Now Susan can fit into that roller coaster seat, completely tie that robe, and ride on the back of her husband’s Harley.

More than one hundred thousand people had weight loss surgery in 2003, and as those pounds continue to drop, the number of people opting for the surgery continues to rise.

Part memoir and part cookbook, Before & After includes a foreword by Susan’s surgeon, comments from a nutritionist, and a section on frequently asked questions. It is an intimate account of Susan’s own transformation, as well as a universal guide for those who have undergone or are considering the procedure.

After her own success, Susan participated in support groups for weight loss surgery patients. There, she discovered that people had as many questions about life after surgery as they had about the operation itself. Before & After answers those questions and many more. An accomplished home cook and longtime culinary enthusiast, Susan quickly became known as the “lady with the recipes.”

Determined not to give up good food and a flexible lifestyle, Susan worked hard to develop recipes that meet her nutritional requirements, yet are delicious and satisfying for her, her family, and her guests. The 100 recipes — which include everything from Roasted Salmon with Mango Salsa and Italian Meatballs to Belgian Chocolate Cheesecake and Lemon Meringue Pie — make about four servings, but each comes with a measured serving for WLS people along with a calorie/carb/fat/protein count. Susan has recipes for every step of the way, from tastes-like-the-real-thing milk shakes for those first post-op days to an entire Thanksgiving menu.
Before & After is a journal of Susan’s own inspirational story, where she shares her ups and downs, her tips and techniques, but mostly it’s a book about hope for anyone who has a serious weight problem.

This SIGNED, FIRST EDITION hardcoverbook with dust jacket is in perfect condition. ISBN-13:9780060567224

Price: $2.49

FROM SUNSET.COM:
What makes a dish a classic? Longevity in a certain cuisine is one mark. France’s coq au vin for instance, qualifies ― it has the power to evoke years of tradition. But the most enduring dishes evoke not only earlier days but also notalgia for those times (high marks again for coq au vin).

People take the most comfort, of course, from the foods they grew up eating, and that list often originates in many culinary traditions. Sweet and sour pork, fettucini Alfredo, tamale pie, cassoulet ― all these familiar dishes are our classics. But “classic” doesn’t necessarily entail long hours in the kitchen achieving feats with indulgent ingredients.

We’ve lightened and streamlined some of our favorites ― even those that seem defined by butter and cream (like fettuccine Alfredo) ― replacing fat with other satisfying flavors to bring you a modern repertoire of classics for comforting weeknight meals. 256 pages

This hardcover book is in excellent condition. ISBN-13: 9780376020215

Price: $ 2.49
