Let’s face it everyone loves mashed potatoes but sometimes you need to get creative. Here’s a great Mashed Potato Casserole recipe from our friends at Potato Patch Recipes.com. This easy to make recipe adds cheese, garlic and green onions to America’s favorite vegetable and turns it into a real celebration.
Ingredients:
- 2 pounds Russet Potatoes, peeled and cut into 1 1/2 inch pieces
- 1/4 cup garlic, thinly sliced
- 1 cup chicken broth
- 1/2 cup sour cream
- 2 tablespoons of butter
- 1/2 teaspoon of salt
- 1/2 teaspoon of white pepper
- 1/4 cup green onions, thinly sliced
- 1/2 cup Parmesan cheese
- 1 tablespoon olive oil
Directions:
In a large pot, place the potatoes, chicken broth, garlic, and 2 cups of water. On a high heat bring the mixture to a boil. Now reduce the heat to low or low-medium. Let the contents simmer for about 15 minutes. Make sure that the potatoes are tender. You will need to scoop up about 3/4 cup of the water from the pot and set it aside.
Drain the potatoes and garlic, then return them to the pot. Put the heat to medium and stir the potatoes. You are going to be drying them. Shouldn’t take more than a minute or two. Now mash the potatoes
With a large wooden spoon, rapidly stir (beat) in the sour cream, butter, salt, pepper, and the 3/4 cup of potato water you set aside. Keep stirring (or beating) until the potatoes are fluffy and soft. Now gently stir in 3 tablespoons of the onions.
Place the potato mixture in a greased oven-proof dish. Sprinkle with the Parmesan cheese and drizzle with the olive oil. Bake at 400F for about 30-35 minutes Spread the remaining onions on top.
